In love with French products and know-how, Franck Putelat has drawn from our regions the strength that is today known for his cuisine full of flavors. Jurassien of origin, Franck Putelat will first make his weapons in a restaurant 1 star Les Rousses, famous ski area of Jura. Recognized for his talent and his will, the Chef officiated with great names in French gastronomy like Georges Blanc en Bresse or Philippe Legendre in Paris. But it is in the south of France that he will eventually settle in 1998, after falling under the spell of Carcassonne.

Quickly he obtained a Michelin star at the restaurant La Barbacane, then obtained the Bocuse d'Argent in the world kitchen contest in 2003. In 2006, he opened his gourmet restaurant "La Table de Franck Putelat" and obtained 2 Michelin stars. In 2013, it is a charming hotel **** "The Park" which opens not far from the City of Carcassonne. With his success and always in search of challenges, Franck Putelat opens in 2016 two other establishment in his city of heart: Brasserie "A 4 Temps" and Pont-Levis Hotel 4 stars. In 2019 it is the realization, he obtains the title of Best Worker of France (MOF).

It is in the historical and bucolic setting of a park at the foot of the ramparts of the Medieval City of Carcassonne, 2 minutes from our hotel, that Franck Putelat gives you an appointment. Its gastronomic restaurant, the culmination of a childhood dream, has been double starred since 2012 and offers a creative and emotional cuisine, combining flavors with audacity and mischief. Airy and with a lot of natural light, the restaurant is a haven of good taste to enjoy a peaceful and friendly moment.

Renowned chef, Franck Putelat develops fine and poetic dishes, using local produce, while reinterpreting classics of French and Languedoc cuisine. In love with Carcassonne, he draws his inspirations and has established all his establishments there.

Since March 2013, Franck Putelat has opened a design hotel adjacent to the restaurant. Composed of seven rooms, the hotel "Le Parc" is entirely designed to extend this refined parenthesis.

The new bistronomic landmark of Carcassonne
Backed by the Porte de Jacobins, the last vestige of the fortifications of the Bastide Saint-Louis, the Brasserie offers a refined and creative cuisine in a typical bistro spirit.

The restaurant works exclusively fresh and local products to achieve a renewed card each season and always in the same form: 4 assortments of tapas to share, 4 starters, 4 dishes of the sea, 4 dishes of the earth, 4 desserts or even 4 "must-haves". A selection of wines and other drinks is also proposed, regularly reviewed to cleverly accompany your dishes.
